Dandelion Salad

Toss together 4 cups each of baby dandelion leaves and lettuce leaves (Romaine or other) with 1 cup diced tomatoes, 1/4 cup chopped chives, and 1 cup chopped dandelion flowers. Add your favorite vinaigrette, herbs, or different oils to suit your tastes.

Pressed flowers:

16 dandelions with leaves and stems

20 sprigs greenery such as ferns

11 sprigs of snow-on-the- mountain

4 buttercups

6 small white daisies

Place plate in center of cardstock and lightly trace with a pencil. Apply a small amount of glue to a toothpick, and place it on the back of each flower. Affix the dandelion leaves around the circle, following the lines but angling some in different directions. Then glue ferns around the leaves, followed by snow-on-the-mountain, dandelions, buttercups, and daisies. Let the piece dry and frame as desired after placing in a mat. (I’ve found that a pale yellow mat works especially well.)

Note: You can also make your wreath larger, using a bigger plate to trace and more plant materials.
